Ingredients
- 1 lb ground turkey
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/2 cup onion, finely diced
- 1/2 cup shredded carrots
- 1/4 cup red bell pepper, finely chopped
- 3 tablespoons soy sauce or tamari
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 tablespoon hoisin sauce
- 1 head butter lettuce or romaine leaves, separated
- 1/4 cup chopped green onions
- 2 tablespoons chopped fresh cilantro (optional)
- For the Peanut Sauce:
- 1/4 cup creamy peanut butter
- 1 tablespoon soy sauce or tamari
- 1 tablespoon lime juice
- 1 tablespoon honey
- 1–2 tablespoons warm water (to thin)
- 1 teaspoon sriracha (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and cook for 2–3 minutes until softened.
- Stir in garlic and ginger and cook for 30 seconds until fragrant.
- Add ground turkey and cook until browned, breaking it apart as it cooks, about 5–7 minutes.
- Mix in shredded carrots and red bell pepper and cook for another 2–3 minutes.
- Stir in soy sauce, rice vinegar, sesame oil, and hoisin sauce. Cook for 2 minutes until well combined. Remove from heat.
- In a small bowl, whisk together peanut butter, soy sauce, lime juice, honey, sriracha, and warm water until smooth.
- Spoon the turkey mixture into lettuce leaves and drizzle with peanut sauce.
- Garnish with green onions and cilantro. Serve immediately.
Notes
- Use tamari instead of regular soy sauce to keep the recipe gluten free.
- Adjust sriracha to your preferred spice level.
- Ground chicken can be substituted for turkey.
