Ingredients
- 1 (7 ounce) package muffin mix (your choice of flavors)
- 1/2 cup milk
- Butter, small amount for greasing the pan
- Maple syrup, for serving (optional)
Instructions
- Place the dry muffin mix in a small mixing bowl and add the milk. Stir with a fork until the batter is smooth and well combined.
- Preheat a pan over medium heat and add a small amount of butter, spreading it to coat the bottom of the pan.
- Spoon batter into the pan to form 3–4 inch diameter circles. Cook until the edges appear set and bubbles begin to rise through the batter.
- Flip the pancakes with a spatula and cook for another 1–2 minutes until cooked through.
- Repeat with the remaining batter and serve warm with maple syrup if desired.
Notes
- Any flavor of muffin mix works well, such as blueberry, chocolate chip, or banana nut.
- If the batter seems too thick, add a small splash of milk to thin it slightly.
- Serve with fruit, yogurt, or powdered sugar for extra flavor.
- Leftover pancakes can be stored in the refrigerator for up to 2 days and reheated in a toaster or skillet.
