Description

A rich and creamy Mushroom Chicken Alfredo Lasagna made with layers of tender chicken, sautéed mushrooms, cheesy ricotta filling, and Alfredo sauce, perfect for a comforting family dinner.


Ingredients

  • 9 lasagna noodles, cooked al dente
  • 2 cups cooked chicken, shredded or chopped
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 pound white mushrooms, sliced
  • Salt and pepper to taste
  • 3 cups Alfredo sauce (jarred or homemade)
  • 1 cup ricotta cheese
  • 1 large egg
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese, divided
  • 1 teaspoon Italian seasoning
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat oven to 350°F and grease a 9×13 inch baking dish.
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic; sauté until translucent.
  3. Add mushrooms and cook until soft and browned. Season with salt and pepper. Set aside.
  4. In a bowl, mix Alfredo sauce and cooked chicken.
  5. In another bowl, combine ricotta cheese, egg, 1/2 cup Parmesan cheese, and Italian seasoning.
  6. Spread a thin layer of chicken Alfredo sauce in the baking dish. Lay down 3 lasagna noodles.
  7. Spread half the ricotta mixture over noodles, then half the mushroom mixture, and about 1/3 of the mozzarella cheese.
  8. Repeat with another layer of noodles, ricotta, mushrooms, and mozzarella.
  9. Top with final layer of noodles, remaining chicken Alfredo sauce, remaining mozzarella, and remaining Parmesan.
  10. Cover with foil and bake for 40 minutes. Remove foil and bake an additional 20 minutes until cheese is bubbly and golden.
  11. Let rest for 10 minutes before serving. Garnish with chopped parsley.

  • Use rotisserie chicken for a quicker prep time.
  • Letting the lasagna rest helps the layers set for cleaner slices.
  • Homemade Alfredo sauce can enhance the flavor if preferred over jarred.
