Description
These no bake caramel cookie dough bars are a healthy, easy dessert made with wholesome ingredients and layered with a soft cookie dough base and gooey caramel topping. They require no oven and are naturally dairy-free and gluten-free.
Ingredients
- 2 cups almond flour
- 1/4 cup coconut flour
- 1/3 cup maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup dairy-free chocolate chips (optional)
- 1 cup soft caramels or homemade date caramel
- 2 tablespoons coconut cream (if making caramel sauce)
Instructions
- Line an 8×8-inch pan with parchment paper and set aside.
- In a large mixing bowl, combine almond flour, coconut flour, and salt.
- Add maple syrup, melted coconut oil, and vanilla extract. Mix until a thick dough forms.
- Fold in chocolate chips if using.
- Press the cookie dough evenly into the prepared pan and refrigerate while preparing the caramel layer.
- If using soft caramels, melt them with coconut cream until smooth. If using date caramel, blend until smooth and spreadable.
- Spread the caramel evenly over the cookie dough layer.
- Refrigerate for at least 1 hour, or until firm.
- Slice into bars and serve. Store leftovers in the refrigerator.
Notes
- For a firmer texture, freeze the bars for 20–30 minutes before slicing.
- You can substitute almond flour with oat flour if not strictly gluten-free.
- Add a drizzle of melted chocolate on top for extra flavor.
- Store in the refrigerator for up to 1 week or freeze for up to 2 months.
