Ingredients
- 2 cups rolled oats
 - 1 cup creamy peanut butter
 - 1/2 cup honey or maple syrup
 - 1 teaspoon vanilla extract
 - 1/2 cup mini chocolate chips
 - Pinch of salt
 
Instructions
- In a medium saucepan over low heat, combine peanut butter and honey (or maple syrup). Stir continuously until the mixture is smooth and warm.
 - Remove from heat and stir in the vanilla extract and a pinch of salt.
 - Add rolled oats to the mixture and stir until fully coated.
 - Let the mixture cool slightly before folding in the mini chocolate chips to prevent melting.
 - Scoop spoonfuls of the mixture onto a parchment-lined baking sheet. Flatten slightly with the back of a spoon if desired.
 - Refrigerate for 20–30 minutes, or until the cookies are firm and set.
