Description

No-Bake Coconut Almond Joy Bars are a quick, easy, and indulgent treat made with chocolate, coconut, and almonds. With simple ingredients and no baking required, these bars are perfect for satisfying your sweet cravings.


Ingredients

2 cups shredded unsweetened coconut

1 cup almond butter

1/4 cup honey or maple syrup

1/4 tsp vanilla extract

1/2 cup whole almonds (or chopped almonds)

1 cup dark chocolate chips

1 tbsp coconut oil


Instructions

  • In a medium bowl, mix shredded coconut, almond butter, honey (or maple syrup), and vanilla extract until fully combined.

  • Line an 8×8-inch baking dish with parchment paper or wax paper.

  • Press the coconut mixture into the dish, evenly spreading it to cover the bottom.

  • Place one almond in the center of each square of the coconut mixture (divide the bars into 12-16 squares).

  • In a microwave-safe bowl, melt chocolate chips and coconut oil in 30-second intervals, stirring between each, until smooth.

  • Pour melted chocolate over the coconut mixture, spreading evenly to cover the coconut and almonds.

  • Refrigerate for at least 1 hour to allow the bars to set.

  • Once firm, remove from the fridge and cut into squares.
