Description

A creamy no-bake dessert inspired by classic chocolate éclairs, layered with graham crackers, fluffy vanilla pudding filling, and a smooth chocolate topping. Chilled until soft and sliceable, it’s an easy crowd-pleasing treat.

Ingredients

  • 2 boxes instant vanilla pudding mix (3.4 oz each)
  • 3 cups cold milk
  • 1 container whipped topping (8 oz), thawed
  • 1 box graham crackers
  • 1 cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • 2 tbsp butter
  • 1 tbsp corn syrup
  • 1 tsp vanilla extract

Instructions

  1. In a large bowl, whisk together the instant vanilla pudding mix and cold milk for about 2 minutes until thickened.
  2. Gently fold the whipped topping into the pudding mixture until smooth and fully combined.
  3. Arrange a single layer of graham crackers on the bottom of a 9×13 inch baking dish.
  4. Spread half of the pudding mixture evenly over the graham crackers.
  5. Add another layer of graham crackers over the pudding.
  6. Spread the remaining pudding mixture evenly over the second layer.
  7. Finish with a final layer of graham crackers on top.
  8. In a saucepan over low heat, combine the heavy cream, chocolate chips, butter, and corn syrup. Stir until melted and smooth.
  9. Remove from heat and stir in the vanilla extract. Allow the chocolate topping to cool slightly.
  10. Pour the chocolate topping over the final layer of graham crackers and spread evenly.
  11. Cover and refrigerate for at least 6 hours or overnight so the layers soften and set.
  12. Slice and serve chilled.

Notes

  • For best texture, refrigerate overnight so the graham crackers soften into cake-like layers.
  • Store covered in the refrigerator for up to 3 days.
  • You can substitute chocolate ganache with store-bought chocolate frosting if desired.
  • For extra flavor, add a thin layer of sliced bananas between the pudding layers.
