Description

These healthy oatmeal raisin bars are a soft and chewy snack made with oats, peanut butter, raisins, and warm spices. Naturally sweetened and easy to make, they’re perfect for meal prep, a quick breakfast, or an on-the-go snack.


Ingredients

  • 2 cups rolled oats
  • 1/2 cup oat flour
  • 1/2 cup natural peanut butter
  • 1/3 cup maple syrup
  • 2 eggs
  • 1/2 cup raisins
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a large bowl, mix together the peanut butter, maple syrup, eggs, and vanilla extract until smooth.
  3. Add the oats, oat flour, cinnamon, nutmeg, salt, and baking soda to the bowl. Stir to combine.
  4. Fold in the raisins until evenly distributed.
  5. Pour the mixture into the prepared baking dish and spread it out evenly.
  6. Bake for 20-25 minutes or until the center is set and the edges are golden brown.
  7. Allow to cool completely before slicing into bars.

Notes
