Oh Henry Bars are rich, chewy no-bake dessert bars made with peanut butter, crispy rice cereal, and a smooth chocolate butterscotch topping. They’re sweet, crunchy, and perfect for parties or quick treats.
Ingredients
- 1 cup granulated sugar
- 1 cup light corn syrup
- 1 cup creamy peanut butter
- 6 cups crispy rice cereal
- 1 cup semi-sweet chocolate chips
- 1 cup butterscotch chips
Instructions
- In a large saucepan over medium heat, combine the sugar and corn syrup. Stir until the sugar is fully dissolved and the mixture begins to gently bubble. Do not boil.
- Remove from heat and stir in the peanut butter until smooth and fully combined.
- Add the crispy rice cereal and mix until evenly coated.
- Press the mixture evenly into a greased 9×13-inch baking dish.
- In a microwave-safe bowl, melt the chocolate chips and butterscotch chips in 30-second intervals, stirring between each interval until smooth.
- Spread the melted chocolate mixture evenly over the cereal layer.
- Allow the bars to cool and set at room temperature or refrigerate until firm. Cut into bars and serve.
Notes
- Do not allow the sugar mixture to fully boil, as this can make the bars hard.
- For easier cutting, chill the bars before slicing.
- You can substitute crunchy peanut butter for added texture.
- Store in an airtight container at room temperature for up to 5 days.
