Description
This one-pot Cajun rice is a quick and flavorful meal packed with spicy sausage, tender vegetables, and fluffy rice. It’s perfect for a midweek dinner and comes together with minimal fuss.
Ingredients
- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1 green pepper, chopped
- 2 celery sticks, chopped
- 1 tbsp Cajun seasoning
- 6 pork sausages, sliced
- 250g long grain rice
- 400g tin chopped tomatoes
- 450ml chicken stock
- Salt and freshly ground black pepper
Instructions
- Heat the olive oil in a large saucepan over a medium heat.
- Add the onion, garlic, pepper and celery, and cook for 5–6 minutes until softened.
- Stir in the Cajun seasoning and cook for 1 minute more.
- Add the sliced sausages and cook for 5 minutes until browned.
- Stir in the rice, chopped tomatoes and chicken stock. Season with salt and pepper.
- Bring to the boil, then reduce the heat to low, cover, and simmer for 20 minutes until the rice is tender and the liquid has been absorbed.
- Fluff the rice with a fork and serve hot.
Notes
- You can substitute the pork sausages with chicken or vegetarian sausages.
- Adjust the amount of Cajun seasoning to suit your spice preference.
- Leftovers can be stored in the fridge for up to 2 days.
