Description

This one-pot Cajun rice is a quick and flavorful meal packed with spicy sausage, tender vegetables, and fluffy rice. It’s perfect for a midweek dinner and comes together with minimal fuss.


Ingredients

  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 green pepper, chopped
  • 2 celery sticks, chopped
  • 1 tbsp Cajun seasoning
  • 6 pork sausages, sliced
  • 250g long grain rice
  • 400g tin chopped tomatoes
  • 450ml chicken stock
  • Salt and freshly ground black pepper

Instructions

  1. Heat the olive oil in a large saucepan over a medium heat.
  2. Add the onion, garlic, pepper and celery, and cook for 5–6 minutes until softened.
  3. Stir in the Cajun seasoning and cook for 1 minute more.
  4. Add the sliced sausages and cook for 5 minutes until browned.
  5. Stir in the rice, chopped tomatoes and chicken stock. Season with salt and pepper.
  6. Bring to the boil, then reduce the heat to low, cover, and simmer for 20 minutes until the rice is tender and the liquid has been absorbed.
  7. Fluff the rice with a fork and serve hot.

Notes

  • You can substitute the pork sausages with chicken or vegetarian sausages.
  • Adjust the amount of Cajun seasoning to suit your spice preference.
  • Leftovers can be stored in the fridge for up to 2 days.
