Description

Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and sauté for 3–4 minutes until translucent. Stir in the minced garlic and cook for about 1 minute until fragrant.
  2. Add the chicken pieces to the skillet and season with salt and pepper. Cook for 5–6 minutes, stirring occasionally, until the chicken is lightly browned on all sides.
  3. Stir in the uncooked rice and mix well so the rice is evenly distributed with the chicken and onions.
  4. Pour in the chicken broth and heavy cream. Add dried thyme and dried parsley, stirring to combine all ingredients.
  5. Bring the mixture to a gentle boil, then reduce the heat to low. Cover the skillet and simmer for 18–20 minutes until the rice is tender and most of the liquid has been absorbed.
  6. Remove the skillet from heat and stir in the grated Parmesan cheese until melted and fully incorporated into the rice.
  7. Taste and adjust seasoning with additional salt and pepper if needed.
  8. Garnish with freshly chopped parsley if desired and serve warm.

Notes

  • For extra flavor, use freshly grated Parmesan cheese instead of pre-shredded varieties.
  • You can substitute chicken thighs for chicken breasts for a richer flavor.
