Ingredients
- 1 lb boneless, skinless chicken breasts or thighs, cut into chunks
- 2 tbsp butter or olive oil
- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1/4 cup all-purpose flour
- 4 cups chicken broth
- 1 cup milk or heavy cream
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1 bay leaf
- Salt and pepper to taste
For the Dumplings:
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 2 tbsp butter, melted
- 1 tbsp fresh parsley, chopped (optional)
Instructions
- In a large pot or Dutch oven, melt butter over medium heat. Add chicken pieces and cook until lightly browned. Remove and set aside.
- In the same pot, add onion, carrots, and celery. Cook for 4–5 minutes until softened. Stir in garlic and cook for another 30 seconds.
- Sprinkle flour over the vegetables and stir for 1 minute to form a roux. Gradually whisk in chicken broth and milk, stirring until smooth and thickened.
- Return chicken to the pot along with thyme, parsley, bay leaf, salt, and pepper. Simmer gently for 15 minutes.
- In a medium bowl, whisk together flour, baking powder, salt, milk, and melted butter until a soft dough forms.
- Drop spoonfuls of dumpling dough onto the simmering soup. Cover tightly and cook for 15 minutes without lifting the lid.
- Remove the bay leaf, adjust seasoning, and garnish with fresh parsley before serving.

- Do not lift the lid while dumplings cook—this ensures they steam properly and stay fluffy.
- Add peas, corn, or green beans for extra vegetables.
- For a creamier texture, stir in additional heavy cream at the end.
- Use shredded rotisserie chicken to save time.
