This One Pot Creamy Cajun Chicken Pasta is a quick, flavorful, and comforting dish made with tender chicken, pasta, and a rich, spicy cream sauce—all cooked in a single pot for easy cleanup.


Ingredients

  • 1 Tbsp olive oil
  • 1 lb. boneless, skinless chicken breast
  • 1 Tbsp Cajun seasoning
  • 1 bell pepper (any color), sliced
  • 1/2 lb. penne pasta (about 2 cups)
  • 15 oz. fire-roasted diced tomatoes
  • 2 cups chicken broth
  • 2 oz. cream cheese
  • 1/4 cup heavy cream
  • 2 green onions, sliced

Instructions

  1. Cut the chicken breast into small bite-sized pieces and season with Cajun seasoning.
  2. Heat olive oil in a large deep skillet over medium heat. Add the chicken and sauté until browned and cooked through.
  3. Add the sliced bell pepper and sauté for 1-2 minutes.
  4. Add the fire-roasted diced tomatoes (with juices), uncooked penne pasta, and chicken broth. Stir to combine.
  5. Place a lid on the skillet, bring to a boil, then reduce to a simmer and cook for about 10 minutes or until pasta is tender, stirring occasionally.
  6. Add the cream cheese and stir until melted and fully combined.
  7. Stir in the heavy cream until the sauce is smooth and creamy.
  8. Top with sliced green onions and serve hot.
