Ingredients
- 1 Tbsp olive oil
- 1 lb. boneless, skinless chicken breast
- 1 Tbsp Cajun seasoning
- 1 bell pepper (any color), sliced
- 1/2 lb. penne pasta (about 2 cups)
- 15 oz. fire-roasted diced tomatoes
- 2 cups chicken broth
- 2 oz. cream cheese
- 1/4 cup heavy cream
- 2 green onions, sliced
Instructions
- Cut the chicken breast into small bite-sized pieces and season with Cajun seasoning.
- Heat olive oil in a large deep skillet over medium heat. Add the chicken and sauté until browned and cooked through.
- Add the sliced bell pepper and sauté for 1-2 minutes.
- Add the fire-roasted diced tomatoes (with juices), uncooked penne pasta, and chicken broth. Stir to combine.
- Place a lid on the skillet, bring to a boil, then reduce to a simmer and cook for about 10 minutes or until pasta is tender, stirring occasionally.
- Add the cream cheese and stir until melted and fully combined.
- Stir in the heavy cream until the sauce is smooth and creamy.
- Top with sliced green onions and serve hot.
Notes
- Adjust Cajun seasoning to taste if you prefer less heat.
- Fire-roasted tomatoes add extra depth, but regular diced tomatoes can be used.
- Substitute cream cheese with more heavy cream for a lighter texture.
