Description

One Pot Creamy Cajun Sausage Pasta is a rich, spicy, and satisfying Southern-inspired dish made with smoked sausage, Cajun seasoning, and a creamy sauce—all in one pot for easy cleanup and maximum flavor.


Ingredients

  • 12 oz smoked sausage (andouille or kielbasa), sliced
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 oz uncooked pasta (penne or rotini)
  • 1/2 cup diced tomatoes (optional)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley or green onions, chopped (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add sliced sausage and cook until browned. Remove and set aside.
  3. In the same pot, sauté onion and garlic until softened.
  4. Stir in Cajun seasoning, then pour in chicken broth and heavy cream.
  5. Add uncooked pasta and bring to a simmer, stirring occasionally to prevent sticking.
  6. Return the sausage to the pot and add diced tomatoes if using.
  7. Cook for 12–15 minutes, or until pasta is tender and sauce has thickened.
  8. Stir in Parmesan cheese until melted and smooth.
  9. Season with salt and pepper to taste.
  10. Garnish with chopped parsley or green onions and serve hot.

Notes

  • Use andouille sausage for authentic Cajun flavor, or kielbasa for a milder version.
  • Add bell peppers, mushrooms, or spinach for extra veggies.
  • For a lighter version, use half-and-half or whole milk instead of heavy cream.
  • Adjust the heat by using more or less Cajun seasoning or adding cayenne pepper.
  • Reheat leftovers with a splash of broth or cream to maintain the creamy texture.
