Ingredients
- 12 oz smoked sausage (andouille or kielbasa), sliced
- 1 tablespoon olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon Cajun seasoning
- 2 cups chicken broth
- 1 cup heavy cream
- 8 oz uncooked pasta (penne or rotini)
- 1/2 cup diced tomatoes (optional)
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
- Fresh parsley or green onions, chopped (for garnish)
Instructions
- In a large pot, heat olive oil over medium heat.
- Add sliced sausage and cook until browned. Remove and set aside.
- In the same pot, sauté onion and garlic until softened.
- Stir in Cajun seasoning, then pour in chicken broth and heavy cream.
- Add uncooked pasta and bring to a simmer, stirring occasionally to prevent sticking.
- Return the sausage to the pot and add diced tomatoes if using.
- Cook for 12–15 minutes, or until pasta is tender and sauce has thickened.
- Stir in Parmesan cheese until melted and smooth.
- Season with salt and pepper to taste.
- Garnish with chopped parsley or green onions and serve hot.
Notes
- Use andouille sausage for authentic Cajun flavor, or kielbasa for a milder version.
- Add bell peppers, mushrooms, or spinach for extra veggies.
- For a lighter version, use half-and-half or whole milk instead of heavy cream.
- Adjust the heat by using more or less Cajun seasoning or adding cayenne pepper.
