Description

Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda

  • 1/2 teaspoon ground ginger
  • 1/2 cup unsalted butter, softened
  • 1/2 cup honey
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon grated orange zest
  • 1/4 cup fresh orange juice
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a muffin tin or mini cake molds.
  2. In a bowl, whisk together the flour, baking powder, baking soda, salt, and ground ginger.
  3. In a separate large bowl, cream the butter, honey, and brown sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition.
  5. Mix in the orange zest, orange juice, and vanilla extract until combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated.
  7. Spoon the batter into the prepared molds, filling each about 3/4 full.
  8. Bake for 18–22 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the cakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
