Description

Oreo Cheesecake Cookie Bars combine the creamy goodness of cheesecake with the indulgent crunch of Oreo cookies. These decadent bars feature a soft cookie base, a rich and velvety cheesecake filling, and a top layer studded with crushed Oreos. Perfect for any occasion!

Ingredients

1 package (16.6 oz) Oreo cookies, crushed

1/2 cup unsalted butter, melted

3 (8 oz) packages cream cheese, softened

1 cup granulated sugar

3 large eggs

1 tsp vanilla extract

1/2 cup sour cream

1 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the crushed Oreos and melted butter. Mix until the crumbs are evenly coated with butter.
  3. Press the Oreo mixture into the bottom of a greased 9×13-inch baking dish to form the crust.
  4. In a large mixing bowl, beat the cream cheese and sugar until smooth and creamy.
  5. Add the eggs, one at a time, beating after each addition. Stir in the vanilla extract.
  6. Add the sour cream and heavy cream, continuing to mix until smooth and well combined.
  7. Pour the cheesecake mixture over the Oreo crust in the baking dish.
  8. Bake for 45-50 minutes or until the center is set and slightly firm.
  9. Let the bars cool to room temperature, then refrigerate for at least 4 hours, or until fully chilled.
  10. Once chilled, cut into squares and serve.

Notes

  1. Chocolate Oreo Cheesecake Bars: Add a few tablespoons of cocoa powder to the cheesecake filling for a chocolatey twist.
  2. Mini Oreo Cheesecake Bars: Use a muffin tin instead of a 9×13-inch dish for individual portions.
  3. Gluten-Free: Swap regular Oreos for gluten-free Oreos to make these bars gluten-free.
  4. Mint Oreo Cheesecake Bars: Use mint-flavored Oreos instead of regular for a refreshing mint flavor.
