Ingredients

  • 2 pounds potatoes, sliced ½-inch thick
  • 1 onion, halved and cut into quarters
  • ½ cup canola oil
  • ½ cup olive oil
  • 4 cloves garlic, chopped
  • 1 envelope onion soup mix
  • 1 tablespoon fresh rosemary, chopped (or more to taste)
  • 1 tablespoon freshly ground black pepper

Instructions

  1. Preheat oven to 450°F (230°C).
  2. In a roasting pan, combine the sliced potatoes and onion quarters. Drizzle with canola and olive oils.
  3. Add garlic, onion soup mix, rosemary, and black pepper. Stir everything together to coat evenly.
  4. Cover the pan with foil and roast for 25 minutes.
  5. After 25 minutes, remove the foil and continue roasting for an additional 15-30 minutes, until the potatoes and onions are browned and crispy on the edges.
