Description

These oven-fried potatoes with Mediterranean spice blend are crispy on the outside, tender on the inside, and bursting with bold, herby flavor. A healthy alternative to traditional fried potatoes, they make a perfect side dish for any Mediterranean-inspired meal.


Ingredients

  • 3 large potatoes, cut into wedges
  • ¼ cup extra virgin olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large mixing bowl, combine olive oil, oregano, thyme, basil, paprika, garlic powder, onion powder, salt, and pepper.
  3. Add the potato wedges to the bowl and toss well to coat evenly with the spice blend.
  4. Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
  5. Bake for 35–40 minutes, flipping halfway through, until golden brown and crispy on the edges.
  6. Serve hot as a side dish or appetizer.
