Ingredients
- 3 large potatoes, cut into wedges
- ¼ cup extra virgin olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and pepper, to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a large mixing bowl, combine olive oil, oregano, thyme, basil, paprika, garlic powder, onion powder, salt, and pepper.
- Add the potato wedges to the bowl and toss well to coat evenly with the spice blend.
- Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
- Bake for 35–40 minutes, flipping halfway through, until golden brown and crispy on the edges.
- Serve hot as a side dish or appetizer.

- Yukon gold or russet potatoes work well for this recipe.
