Description

These brown sugar honey glazed carrots are a sweet, savory, and buttery side dish perfect for holidays or everyday dinners. Roasted to perfection and coated in a rich glaze, they’re easy to prepare and incredibly flavorful.


Ingredients

  • 2 lbs carrots, peeled and cut on the bias into 1/2-inch thick slices
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 2 tbsp vegan butter (or regular butter if not vegan)
  • 3 tbsp brown sugar
  • 2 tbsp honey or maple syrup
  • 1 tsp cinnamon
  • 1/4 tsp ground ginger
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 425˚F (218˚C).
  2. Peel and slice carrots on the bias into 1/2-inch thick pieces.
  3. Toss carrots in olive oil, salt, and pepper on a large baking sheet.
  4. Roast for 25–30 minutes, tossing once halfway through, until tender and starting to caramelize.
  5. Meanwhile, melt butter in a small saucepan over medium heat.
  6. Add brown sugar, honey (or maple syrup), cinnamon, and ground ginger. Stir until fully melted and combined.
  7. Remove carrots from oven and transfer to a large mixing bowl.
  8. Pour glaze over roasted carrots and toss well to coat evenly.
  9. Transfer to serving dish and garnish with chopped parsley if desired. Serve warm.

  • Maple syrup can be used instead of honey for a fully vegan version.
