Description
These brown sugar honey glazed carrots are a sweet, savory, and buttery side dish perfect for holidays or everyday dinners. Roasted to perfection and coated in a rich glaze, they’re easy to prepare and incredibly flavorful.
Ingredients
- 2 lbs carrots, peeled and cut on the bias into 1/2-inch thick slices
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 2 tbsp vegan butter (or regular butter if not vegan)
- 3 tbsp brown sugar
- 2 tbsp honey or maple syrup
- 1 tsp cinnamon
- 1/4 tsp ground ginger
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 425˚F (218˚C).
- Peel and slice carrots on the bias into 1/2-inch thick pieces.
- Toss carrots in olive oil, salt, and pepper on a large baking sheet.
- Roast for 25–30 minutes, tossing once halfway through, until tender and starting to caramelize.
- Meanwhile, melt butter in a small saucepan over medium heat.
- Add brown sugar, honey (or maple syrup), cinnamon, and ground ginger. Stir until fully melted and combined.
- Remove carrots from oven and transfer to a large mixing bowl.
- Pour glaze over roasted carrots and toss well to coat evenly.
- Transfer to serving dish and garnish with chopped parsley if desired. Serve warm.
Notes
- Maple syrup can be used instead of honey for a fully vegan version.
- You can prep the glaze ahead and store in the refrigerator for up to 3 days.
