Description
These Overnight Cinnamon Rolls are soft, fluffy, and filled with a rich cinnamon-sugar mixture. Perfect for prepping the night before and baking fresh in the morning, making them ideal for holidays and special breakfasts.
Ingredients
- 1 cup warm milk (about 110°F)
- 2¼ teaspoons active dry yeast (1 packet)
- ½ cup granulated sugar, divided
- ⅓ cup unsalted butter, melted
- 2 large eggs
- 4½ cups all-purpose flour
- 1 teaspoon salt
- ½ cup unsalted butter, softened (for filling)
- 1 cup packed light brown sugar (for filling)
- 2 tablespoons ground cinnamon (for filling)
- 4 ounces cream cheese, softened (for frosting)
- ¼ cup unsalted butter, softened (for frosting)
- 1½ cups powdered sugar (for frosting)
- ½ teaspoon vanilla extract (for frosting)
- Pinch of salt (for frosting)
- 1–2 tablespoons milk (as needed for frosting consistency)
Instructions
- In the bowl of a stand mixer, combine warm milk, yeast, and 1 tablespoon of sugar. Let it sit for 5–10 minutes until foamy.
- Add remaining sugar, melted butter, eggs, flour, and salt. Mix using the dough hook attachment until a soft dough forms.
- Knead the dough for about 5–7 minutes until smooth and elastic. Transfer to a greased bowl, cover, and let rise in a warm place for 1–1.5 hours until doubled in size.
- Roll out the dough on a floured surface into a large rectangle (about 16×12 inches).
- Spread softened butter over the dough, then sprinkle with a mixture of brown sugar and cinnamon.
- Starting from the long side, roll up the dough tightly and cut into 12 equal rolls.
- Place rolls in a greased 9×13-inch baking dish. Cover tightly with plastic wrap and refrigerate overnight.
- In the morning, remove rolls from refrigerator and let them come to room temperature and rise for about 45 minutes to 1 hour.
- Preheat oven to 350°F (175°C). Bake the rolls for 25–30 minutes, until golden brown.
- While rolls bake, prepare the frosting: beat cream cheese and butter until smooth. Add powdered sugar, vanilla, salt, and enough milk to reach desired consistency.
- Spread frosting over warm rolls and serve.
Notes
- You can prepare the dough and bake immediately instead of overnight if desired.
- Adjust frosting consistency by adding more or less milk.
- Store leftover rolls in an airtight container and reheat before serving.
