Ingredients
- 3 flax eggs
- 1.5 cups cooked cannellini beans (rinsed and drained)
- 1/2 tbsp olive oil
- 1 tbsp olive oil (for frying)
- 2 shallots (finely chopped)
- 3 garlic cloves (minced)
- 1/4 cup sun-dried tomatoes (finely chopped)
- 1 cup old-fashioned rolled oats
- 2/3 cup walnuts
- 3 tbsp nutritional yeast
- 1 tbsp tomato puree
- 1 tbsp parsley (finely chopped)
- 1.5 tbsp tamari
- 1.5 tsp dried Italian seasoning
- 1.5 tsp fennel seeds
- 1.5 tsp smoked paprika
- 3/4 tsp sea salt
- 1/4 tsp ground pepper
- 1/8 tsp red pepper flakes
Instructions
- In a small bowl, prepare the flax eggs by mixing ground flax meal with water and set aside.
- Drain and rinse the white beans, then dry thoroughly using a kitchen towel.
- Heat 1/2 tbsp olive oil in a skillet over medium heat. Sauté the chopped shallots until soft, about 4 minutes. Add garlic and sun-dried tomatoes, cooking for 1 minute. Set aside.
- In a food processor or blender, pulse the oats and walnuts until a coarse texture forms.
- Add the white beans, sautéed mixture, and all remaining ingredients to the food processor. Pulse a few times until just combined, avoiding over-processing. Transfer mixture to the freezer to chill for 40 minutes.
- Once chilled, form the mixture into 8 sausage shapes using your hands, lightly oiling hands if needed.
- Heat 1 tbsp olive oil in a skillet over medium heat. Cook sausages until golden, about 2 minutes per side (approximately 7 minutes total). Serve hot.
