Ingredients
- 4 medium russet potatoes, peeled and chopped
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced (or 1 teaspoon garlic powder)
- 1/4 cup cornstarch or all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh parsley (optional)
- 2 cups vegetable or canola oil for frying
Instructions
- Place the peeled and chopped potatoes in a large pot of salted water. Bring to a boil and cook until fork-tender.
- Drain the potatoes thoroughly and mash until completely smooth. Let cool slightly.
- Add grated Parmesan, garlic, salt, pepper, and cornstarch or flour. Mix until well combined and the mixture holds together.
- Scoop small portions and roll into evenly sized balls. Lightly dust hands with flour if needed.
- Heat oil in a deep pan over medium heat until hot (about 350°F/175°C).
- Fry the potato balls in batches for 5–7 minutes, turning occasionally, until golden brown and crispy.
- Remove with a slotted spoon and drain on paper towels.
- Garnish with chopped parsley and extra Parmesan if desired. Serve warm.
