Ingredients

  • For the Peach Filling:
  • 2 cups peeled and diced peaches
  • 1 tablespoon butter
  • 1 tablespoon brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch (optional)
  • 1 tablespoon water (if using cornstarch)
  • For the Cheesecake Filling:
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • For Assembly:
  • 10 egg roll wrappers
  • Vegetable oil for frying
  • ¼ cup cinnamon sugar (3 tbsp sugar + 1 tbsp cinnamon)

Instructions

  1. In a skillet, melt butter over medium heat. Add diced peaches, brown sugar, cinnamon, and vanilla extract. Cook for 5-7 minutes, until the peaches soften and release their juices.
  2. If you’d like a thicker filling, mix cornstarch with water, then add it to the peach mixture. Cook for another 1-2 minutes until the filling thickens. Remove from heat and let cool.
  3. In a separate bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  4. Place an egg roll wrapper on a flat surface in a diamond shape. Add 1 tablespoon of the cheesecake filling and 1 tablespoon of the peach filling in the center of the wrapper.
  5. Fold the bottom corner of the wrapper over the filling, fold in the sides, and roll up tightly. Seal the edges with a little water.
  6. Heat vegetable oil in a large pan to 350°F. Fry the rolls for 2-3 minutes on each side, or until golden brown and crispy.
  7. Roll the hot peach cheesecake rolls in cinnamon sugar to coat evenly.
  8. Serve immediately and enjoy the warm, gooey center!

Notes

  • You can use fresh or frozen peaches for this recipe. If using frozen, make sure not to thaw them before cooking.
