Ingredients
- For the Peach Filling:
- 2 cups peeled and diced peaches
- 1 tablespoon butter
- 1 tablespoon brown sugar
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch (optional)
- 1 tablespoon water (if using cornstarch)
- For the Cheesecake Filling:
- 8 oz cream cheese, softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- For Assembly:
- 10 egg roll wrappers
- Vegetable oil for frying
- ¼ cup cinnamon sugar (3 tbsp sugar + 1 tbsp cinnamon)
Instructions
- In a skillet, melt butter over medium heat. Add diced peaches, brown sugar, cinnamon, and vanilla extract. Cook for 5-7 minutes, until the peaches soften and release their juices.
- If you’d like a thicker filling, mix cornstarch with water, then add it to the peach mixture. Cook for another 1-2 minutes until the filling thickens. Remove from heat and let cool.
- In a separate bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Place an egg roll wrapper on a flat surface in a diamond shape. Add 1 tablespoon of the cheesecake filling and 1 tablespoon of the peach filling in the center of the wrapper.
- Fold the bottom corner of the wrapper over the filling, fold in the sides, and roll up tightly. Seal the edges with a little water.
- Heat vegetable oil in a large pan to 350°F. Fry the rolls for 2-3 minutes on each side, or until golden brown and crispy.
- Roll the hot peach cheesecake rolls in cinnamon sugar to coat evenly.
- Serve immediately and enjoy the warm, gooey center!

- You can use fresh or frozen peaches for this recipe. If using frozen, make sure not to thaw them before cooking.
