Description

Peach Pie Cruffins are a delightful combination of buttery, flaky croissant-like pastry and sweet, juicy peach filling. A perfect hybrid treat that’s sure to impress at any occasion.

Ingredients

1 sheet of puff pastry dough

3 large peaches, peeled and diced

1/4 cup sugar

1 tablespoon cornstarch

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1 tablespoon lemon juice

1/4 teaspoon vanilla extract

1 egg, beaten (for egg wash)

Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium saucepan, combine the diced peaches, sugar, cornstarch, cinnamon, nutmeg, lemon juice, and vanilla extract. Cook over medium heat for about 5-7 minutes, or until the peaches begin to soften and the mixture thickens. Remove from heat and set aside to cool.
  3. Roll out the puff pastry sheet on a lightly floured surface. Cut the pastry into 6 equal rectangles.
  4. Place a spoonful of the peach filling onto the center of each pastry rectangle.
  5. Roll up each rectangle from one end to the other, forming a spiral shape.
  6. Place the cruffins into a muffin tin, ensuring they are snug and upright.
  7. Brush the tops of each cruffin with the beaten egg to create a golden finish.
  8. Bake for 20-25 minutes or until the cruffins are golden brown and crispy.
  9. Allow the cruffins to cool slightly before dusting them with powdered sugar.

Notes

  1. If you prefer a different fruit, you can substitute the peaches with apples, pears, or berries.
  2. For added flavor, try incorporating a pinch of cardamom or allspice into the filling.
  3. Store the cruffins in an airtight container at room temperature for 2-3 days, or refrigerate for up to a week.
  4. For a sweeter touch, drizzle a sugar glaze over the cruffins after they cool.
