Ingredients
1 sheet of puff pastry dough
3 large peaches, peeled and diced
1/4 cup sugar
1 tablespoon cornstarch
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 tablespoon lemon juice
1/4 teaspoon vanilla extract
1 egg, beaten (for egg wash)
Powdered sugar (for dusting)
Instructions
- Preheat your oven to 375°F (190°C).
 - In a medium saucepan, combine the diced peaches, sugar, cornstarch, cinnamon, nutmeg, lemon juice, and vanilla extract. Cook over medium heat for about 5-7 minutes, or until the peaches begin to soften and the mixture thickens. Remove from heat and set aside to cool.
 - Roll out the puff pastry sheet on a lightly floured surface. Cut the pastry into 6 equal rectangles.
 - Place a spoonful of the peach filling onto the center of each pastry rectangle.
 - Roll up each rectangle from one end to the other, forming a spiral shape.
 - Place the cruffins into a muffin tin, ensuring they are snug and upright.
 - Brush the tops of each cruffin with the beaten egg to create a golden finish.
 - Bake for 20-25 minutes or until the cruffins are golden brown and crispy.
 - Allow the cruffins to cool slightly before dusting them with powdered sugar.
