Description

Ingredients

  • 3 cups old-fashioned oats
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ⅓ cup brown sugar
  • 2 eggs
  • 1½ cups milk
  • ½ cup applesauce
  • 2 teaspoons vanilla extract
  • ¼ cup melted butter
  • ½ cup raisins or dried cranberries (optional)

Instructions

  1. Preheat oven to 350°F. Spray a 9×13 inch baking dish with non-stick cooking spray.
  2. In a large bowl, combine oats, baking powder, cinnamon, salt, and brown sugar. Mix well.
  3. In a separate bowl, whisk together eggs, milk, applesauce, vanilla extract, and melted butter.
  4. Pour the wet ingredients into the dry ingredients and stir until combined.
  5. Fold in raisins or dried cranberries if using.
  6. Pour the mixture into the prepared baking dish and spread evenly.
  7. Bake for 30–35 minutes or until the center is set and the top is golden brown.
  8. Allow to cool slightly before serving. Serve warm or cold.
