Ingredients
- 3 cups old-fashioned oats
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- ½ teaspoon salt
- ⅓ cup brown sugar
- 2 eggs
- 1½ cups milk
- ½ cup applesauce
- 2 teaspoons vanilla extract
- ¼ cup melted butter
- ½ cup raisins or dried cranberries (optional)
Instructions
- Preheat oven to 350°F. Spray a 9×13 inch baking dish with non-stick cooking spray.
- In a large bowl, combine oats, baking powder, cinnamon, salt, and brown sugar. Mix well.
- In a separate bowl, whisk together eggs, milk, applesauce, vanilla extract, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until combined.
- Fold in raisins or dried cranberries if using.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 30–35 minutes or until the center is set and the top is golden brown.
- Allow to cool slightly before serving. Serve warm or cold.
