Description

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, cold and cubed
  • 16 oz cream cheese, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups sliced fresh or well-drained canned peaches
  • 1/2 cup powdered sugar (optional, for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper or lightly grease it.
  2. In a large bowl, combine flour, granulated sugar, and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  3. Press two-thirds of the mixture into the bottom of the prepared pan to form the crust. Bake for 10–12 minutes, or until lightly golden.
  4. Meanwhile, in a separate bowl, beat the cream cheese with 1/2 cup granulated sugar until smooth and creamy. Add eggs and vanilla extract, mixing until fully incorporated.
  5. Spread the cream cheese mixture evenly over the pre-baked crust.
  6. Layer the sliced peaches evenly over the cream cheese filling.
  7. Crumble the remaining crust mixture over the peaches.
  8. Bake for 40–45 minutes, or until the top is golden brown and the center is set.
  9. Allow the bars to cool completely in the pan for about 1 hour.
  10. Optional: Mix powdered sugar with a little milk or water to make a glaze and drizzle over cooled bars before serving.
