Ingredients
- 2 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 teaspoon salt
- 1 cup (2 sticks) unsalted butter, cold and cubed
- 16 oz cream cheese, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups sliced fresh or well-drained canned peaches
- 1/2 cup powdered sugar (optional, for glaze)
Instructions
- Preheat the oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper or lightly grease it.
- In a large bowl, combine flour, granulated sugar, and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Press two-thirds of the mixture into the bottom of the prepared pan to form the crust. Bake for 10–12 minutes, or until lightly golden.
- Meanwhile, in a separate bowl, beat the cream cheese with 1/2 cup granulated sugar until smooth and creamy. Add eggs and vanilla extract, mixing until fully incorporated.
- Spread the cream cheese mixture evenly over the pre-baked crust.
- Layer the sliced peaches evenly over the cream cheese filling.
- Crumble the remaining crust mixture over the peaches.
- Bake for 40–45 minutes, or until the top is golden brown and the center is set.
- Allow the bars to cool completely in the pan for about 1 hour.
- Optional: Mix powdered sugar with a little milk or water to make a glaze and drizzle over cooled bars before serving.
