Ingredients
1 ½ cups coconut yogurt (plain or vanilla)
1 cup unsweetened coconut milk
½ cup chia seeds
2 ripe fresh peaches, diced
¼ cup toasted shredded coconut
Instructions
-
Make the pudding: In a mixing bowl, whisk together coconut yogurt, coconut milk, and chia seeds until well combined.
 -
Chill: Cover and refrigerate for 4–6 hours or overnight to allow chia seeds to absorb liquid and thicken.
 -
Stir & assemble: Once set, stir the pudding mixture and divide it evenly among 5 cups.
 -
Add peaches: Spoon diced peaches over the pudding layer.
 -
Garnish: Top each cup with a sprinkle of toasted shredded coconut just before serving.

Notes
- For added sweetness, mix in 1–2 tablespoons of maple syrup or honey.
 - Swap peaches with mango, pineapple, or berries for seasonal variation.
 - Add chopped nuts for extra crunch or a scoop of vanilla protein powder for a boost.
 - Store covered in the fridge for up to 4 days. Add a splash of coconut milk if it thickens too much.
