Ingredients
- 2 ripe bananas, mashed
- 1/2 cup creamy peanut butter
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 1/2 teaspoon cinnamon
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- In a large bowl, mash the ripe bananas.
- Add peanut butter, maple syrup, and vanilla extract. Mix until well combined.
- Stir in the oats, cinnamon, baking powder, and salt.
- Fold in the chocolate chips if using.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 20–25 minutes, or until the top is set and lightly golden.
- Let cool before slicing into bars.
Notes
- Use overripe bananas for the best sweetness and texture.
- You can substitute almond butter or another nut/seed butter.
- Store leftovers in an airtight container in the fridge for up to 5 days.
- Bars can be frozen for longer storage.
