These Chocolate Peanut Butter Banana Bites are an easy, no-bake frozen snack made by sandwiching creamy peanut butter between banana slices, dipping them in melted chocolate, and freezing until firm. They’re sweet, satisfying, and taste like mini ice cream bites.
Ingredients
- 2 medium ripe bananas (firm, not overly soft)
- 1/3 cup peanut butter (or other nut/seed butter)
- 1 cup chocolate chips (dark, milk, or sugar-free)
- 1 tsp coconut oil (or butter)
- Flaky salt, for topping (optional)
Instructions
- Peel the bananas and slice them into 1/2-inch (1.25 cm) thick rounds.
- Lay half of the slices on a parchment-lined baking sheet.
- Spread a small amount of peanut butter on each banana slice.
- Top each with another banana slice to form a sandwich.
- Freeze the banana sandwiches for at least 30 minutes until firm.
- In a microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals, stirring between each until smooth.
- Dip each frozen banana sandwich into the melted chocolate using a fork, coating it completely.
- Place the coated bites back on the parchment-lined sheet and sprinkle with flaky salt if desired.
- Freeze again for about 30 minutes, or until the chocolate is set.
- Serve directly from the freezer and enjoy!
Notes
- For a lighter option, use powdered peanut butter (PB2) mixed with water.
- Try almond, cashew, or sunflower seed butter for different flavors.
- Top with crushed nuts, coconut flakes, or chia seeds before freezing for texture.
- Let sit for 1–2 minutes before eating to soften slightly and prevent chocolate cracking.
