Description

A quick and satisfying breakfast sandwich made with crisp whole-grain waffles layered with creamy peanut butter, tangy Greek yogurt, and sweet fresh berries.


Ingredients

  • 2 frozen whole-grain waffles
  • 2 tbsp natural peanut butter
  • 1/2 cup mixed fresh berries (strawberries, blueberries, or raspberries)
  • 1 tsp honey
  • 1 tbsp plain Greek yogurt

Instructions

  1. Toast the frozen waffles according to the package instructions until golden and crisp.
  2. Spread peanut butter evenly over one side of each toasted waffle.
  3. In a small bowl, gently mix the berries with the honey.
  4. Spread the Greek yogurt over one peanut-butter-coated waffle.
  5. Spoon the berry mixture on top of the yogurt layer.
  6. Place the second waffle on top with the peanut butter side facing down to form a sandwich.
  7. Slice in half if desired and serve immediately.

Notes

  • Swap Greek yogurt with dairy-free yogurt to make it dairy-free.
  • Use almond or cashew butter instead of peanut butter if preferred.
