Description

Ingredients

  • 1 cup natural creamy peanut butter
  • 2/3 cup coconut sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup almond flour
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, mix together the peanut butter, coconut sugar, egg, and vanilla extract until smooth.
  3. Add the baking soda, salt, and almond flour to the bowl, and mix until well combined.
  4. Fold in the chocolate chips.
  5. Using a cookie scoop or spoon, scoop out dough and roll into balls. Place on the baking sheet and gently press down to flatten slightly.
  6. Bake for 10–12 minutes or until edges are golden.
  7. Let cookies cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.
