Ingredients
- 1 cup natural creamy peanut butter
- 2/3 cup coconut sugar
- 1 egg
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup almond flour
- 1/2 cup chocolate chips
Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a medium bowl, mix together the peanut butter, coconut sugar, egg, and vanilla extract until smooth.
- Add the baking soda, salt, and almond flour to the bowl, and mix until well combined.
- Fold in the chocolate chips.
- Using a cookie scoop or spoon, scoop out dough and roll into balls. Place on the baking sheet and gently press down to flatten slightly.
- Bake for 10–12 minutes or until edges are golden.
- Let cookies cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Use natural peanut butter with no added sugar or oil for best results.
- Cookies will continue to cook slightly on the baking sheet after being removed from the oven.
- Store in an airtight container at room temperature for up to 5 days or freeze for longer storage.
