These no-bake Peanut Butter Energy Bars are a healthy and delicious snack made with wholesome ingredients like oats, peanut butter, honey, and flaxseed. They’re perfect for meal prep and on-the-go energy boosts.
Ingredients
- 1 cup natural creamy peanut butter
- 1/2 cup honey (or maple syrup for vegan)
- 1 1/2 cups rolled oats
- 1/2 cup ground flaxseed
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup mini chocolate chips
Instructions
- In a medium saucepan over low heat, stir together the peanut butter and honey until smooth and melted.
- Remove from heat and stir in oats, ground flaxseed, cinnamon, and salt until fully combined.
- Let the mixture cool for a few minutes, then fold in the mini chocolate chips.
- Press the mixture firmly into a parchment-lined 8×8 inch baking dish.
- Refrigerate for at least one hour before cutting into bars.
- Store in the fridge for up to one week or freeze for longer storage.
Notes
- You can substitute maple syrup for honey to make this recipe vegan.
- Use almond butter or another nut/seed butter if desired.
- Add chia seeds, hemp seeds, or dried fruit for extra nutrition.
- Bars are easier to cut when cold.
