Description

These Peanut Butter S’mores Cookie Bars are a delicious twist on the classic campfire treat, combining a chewy peanut butter cookie base with gooey marshmallows and melty chocolate for a crowd-pleasing dessert.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/4 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup creamy peanut butter
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup graham cracker crumbs
  • 1 cup mini marshmallows
  • 1 cup milk chocolate chips

Instructions

  1. Preheat oven to 350°F. Lightly grease or line an 8×8-inch baking dish with parchment paper.
  2. In a large bowl, cream together butter, sugar, and brown sugar until light and fluffy.
  3. Add peanut butter, egg, and vanilla extract. Beat until combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to wet ingredients and mix until combined.
  5. Stir in graham cracker crumbs until fully incorporated.
  6. Spread about two-thirds of the dough into the prepared baking dish.
  7. Sprinkle marshmallows and chocolate chips evenly over the dough.
  8. Drop remaining dough by spoonfuls over the top and gently spread it out as much as possible.
  9. Bake for 18–22 minutes or until the top is golden and edges are set.
  10. Allow bars to cool before cutting into squares and serving.

Notes

  • Let the bars cool completely before cutting for cleaner slices.
  • You can use semi-sweet chocolate chips if preferred.
  • Adjust the amount of marshmallows and chocolate chips based on your taste.
