These Peanut Butter S’mores Cookie Bars are a delicious twist on the classic campfire treat, combining a chewy peanut butter cookie base with gooey marshmallows and melty chocolate for a crowd-pleasing dessert.
Ingredients
- 1/2 cup unsalted butter, softened
- 1/4 cup sugar
- 1/2 cup brown sugar
- 1/2 cup creamy peanut butter
- 1 large egg
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup graham cracker crumbs
- 1 cup mini marshmallows
- 1 cup milk chocolate chips
Instructions
- Preheat oven to 350°F. Lightly grease or line an 8×8-inch baking dish with parchment paper.
- In a large bowl, cream together butter, sugar, and brown sugar until light and fluffy.
- Add peanut butter, egg, and vanilla extract. Beat until combined.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to wet ingredients and mix until combined.
- Stir in graham cracker crumbs until fully incorporated.
- Spread about two-thirds of the dough into the prepared baking dish.
- Sprinkle marshmallows and chocolate chips evenly over the dough.
- Drop remaining dough by spoonfuls over the top and gently spread it out as much as possible.
- Bake for 18–22 minutes or until the top is golden and edges are set.
- Allow bars to cool before cutting into squares and serving.
Notes
- Let the bars cool completely before cutting for cleaner slices.
- You can use semi-sweet chocolate chips if preferred.
- Adjust the amount of marshmallows and chocolate chips based on your taste.
