Ingredients
- 2 Filet Mignons
- salt & ground black pepper (to taste)
- 1 tablespoon oil
- 2 tablespoons unsalted butter
- 5 cloves garlic (peeled)
- 4 sprigs fresh rosemary
Instructions
- Remove filet mignons from the refrigerator 30–60 minutes before cooking. Unwrap, season generously with salt and pepper, and let sit at room temperature.
- Preheat oven to 360°F. Heat a medium cast iron skillet over high heat for 3–5 minutes. Add oil carefully, then sear the steaks for 2–3 minutes per side (1–2 minutes for smaller cuts) until a browned crust forms. Remove skillet from heat.
- Add butter, garlic, and rosemary to the skillet. Transfer skillet to the oven and cook for 2–8 minutes depending on desired doneness, removing when internal temperature is 5–10°F below target.
- Remove steaks from skillet and place on a plate. Tent with foil and rest for 5–10 minutes before serving with garlic cloves and butter from the skillet.
Notes
- Choose steaks about 1.5–2 inches thick for best results.
- Use a meat thermometer to ensure accurate doneness.
- Letting the steak rest is essential to retain juices.
- Serve with mashed potatoes, vegetables, or a light salad.
