Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup sliced carrots
  • 1/2 cup sliced bell peppers (red, yellow, or green)
  • 1 tablespoon lemon juice (optional for veggies)

Instructions

  1. Preheat grill to medium-high heat.
  2. Rub chicken breasts with olive oil, then season with garlic powder, paprika, salt, and pepper.
  3. Grill chicken for 6–7 minutes on each side or until internal temperature reaches 165°F (75°C).
  4. While the chicken is grilling, prepare the vegetables.
  5. In a steamer basket over boiling water, add broccoli, cauliflower, carrots, and bell peppers.
  6. Steam vegetables for 5–7 minutes or until tender-crisp.
