Description

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. In a large bowl, cream together the butter and sugar until light and fluffy.
  2. Add the egg and vanilla extract and beat until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing until the dough comes together.
  5. Divide the dough into two portions, wrap in plastic wrap, and refrigerate for at least 1 hour.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Roll out the dough on a lightly floured surface to about 1/4-inch thickness.
  8. Cut into shapes with cookie cutters and place on the prepared baking sheets.
  9. Bake for 8–10 minutes, or until the edges just begin to turn golden.
  10. Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
