Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 1/2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add the egg and vanilla extract and beat until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until the dough comes together.
- Divide the dough into two portions, wrap in plastic wrap, and refrigerate for at least 1 hour.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Roll out the dough on a lightly floured surface to about 1/4-inch thickness.
- Cut into shapes with cookie cutters and place on the prepared baking sheets.
- Bake for 8–10 minutes, or until the edges just begin to turn golden.
- Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- Chilling the dough helps prevent the cookies from spreading.
- Don’t overbake – cookies should be set but not browned.
- Perfect base for icing or sprinkles.
- You can freeze the dough or baked cookies for later use.
