Description

This Perfect Vanilla Cake is a soft, moist, and flavorful classic layered cake made from scratch, ideal for birthdays and celebrations. It features a tender crumb and rich vanilla flavor, paired perfectly with creamy buttercream frosting.


Ingredients

  • 1 cup (2 sticks) unsalted butter, room temperature
  • 1/2 cup vegetable oil
  • 2 cups granulated sugar
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 3 cups all-purpose flour
  • 1 cup buttermilk
  • 1/2 cup sour cream

Instructions

  1. Preheat oven to 350°F. Grease and flour two 8-inch round cake pans and set aside.
  2. In the bowl of your stand mixer fitted with the paddle attachment, mix butter, oil, and sugar together on medium speed until light and fluffy (about 2 minutes).
  3. Add eggs one at a time, mixing well after each addition. Add in vanilla extract and mix until combined.
  4. Add baking powder and salt, mixing to incorporate.
  5. Turn mixer to low and add flour in three additions, alternating with the buttermilk, beginning and ending with flour. Mix until just combined.
  6. Mix in sour cream until batter is smooth, scraping sides of the bowl as needed.
  7. Divide batter evenly between the prepared pans and smooth the tops.
  8. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow cakes to cool in pans for 10 minutes, then turn out onto a wire rack to cool completely before frosting.
