Ingredients
2 chicken breasts or thighs
1 tablespoon olive oil
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon garlic powder
Salt and pepper to taste
1 cup rice
2 cups chicken broth
1 tablespoon butter
1/4 cup fresh cilantro
1/2 jalapeño (seeds removed for less heat)
2 cloves garlic
1/4 cup lime juice
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon olive oil (for the sauce)
Instructions
- Season the chicken: In a small bowl, combine cumin, paprika, garlic powder, salt, and pepper. Rub the spice mixture onto the chicken breasts or thighs. Heat olive oil in a large skillet over medium heat. Cook the chicken for about 6-8 minutes on each side or until fully cooked and golden brown. Once done, remove the chicken from the skillet and set it aside to rest.
- Cook the rice: In the same skillet, melt butter and add rice. Stir the rice for a minute to coat it with the butter. Add chicken broth and bring it to a boil. Reduce heat to low, cover, and cook for 18-20 minutes or until the rice is tender and the liquid is absorbed.
- Make the green sauce: In a blender or food processor, combine cilantro, jalapeño, garlic, lime juice, mayonnaise, sour cream, and olive oil. Blend until smooth. Taste and adjust seasoning with salt or lime juice if needed.
- Assemble the dish: Once the chicken has rested, slice it into strips. Serve the cooked rice on a plate, top with sliced chicken, and drizzle generously with the green sauce. Garnish with extra cilantro if desired.
