Ingredients
- 1 (15 oz) can chickpeas, drained and rinsed
- 1/4 cup vegan pesto
- 2 tbsp vegan mayonnaise
- 1 tbsp lemon juice
- 1/4 cup celery, finely chopped
- 1/4 cup red onion, finely chopped
- Salt, to taste
- Pepper, to taste
- Bread or sandwich rolls
- Lettuce or greens (optional)
Instructions
- In a large bowl, mash the chickpeas with a fork or potato masher until mostly broken down but slightly chunky.
- Add the vegan pesto, vegan mayonnaise, and lemon juice to the mashed chickpeas and mix well.
- Stir in the chopped celery and red onion until evenly combined.
- Season with salt and pepper to taste.
- Assemble sandwiches by spreading the chickpea mixture onto bread and topping with lettuce or greens if desired.
- Serve immediately or chill before serving for enhanced flavor.
