Description

Ingredients

  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1/4 cup vegan pesto
  • 2 tbsp vegan mayonnaise
  • 1 tbsp lemon juice
  • 1/4 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • Salt, to taste
  • Pepper, to taste
  • Bread or sandwich rolls
  • Lettuce or greens (optional)

Instructions

  1. In a large bowl, mash the chickpeas with a fork or potato masher until mostly broken down but slightly chunky.
  2. Add the vegan pesto, vegan mayonnaise, and lemon juice to the mashed chickpeas and mix well.
  3. Stir in the chopped celery and red onion until evenly combined.
  4. Season with salt and pepper to taste.
  5. Assemble sandwiches by spreading the chickpea mixture onto bread and topping with lettuce or greens if desired.
  6. Serve immediately or chill before serving for enhanced flavor.
