Description

These Pesto Tortellini Bites are a simple and flavorful appetizer made by coating cheese tortellini in pesto, skewering them, and roasting until crispy. Perfect for parties or easy weeknight snacks.


Ingredients

  • 10 oz package of cheese tortellini
  • 1/2 cup pesto (store-bought or homemade)
  • 1/2 cup grated Parmesan cheese
  • Cooking spray
  • Optional: fresh basil or extra Parmesan for garnish

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Cook tortellini according to package instructions, then drain and let cool slightly.
  3. In a large bowl, toss the tortellini with pesto until evenly coated.
  4. Thread 3–4 pesto-coated tortellini onto small skewers or toothpicks.
  5. Sprinkle the skewers with grated Parmesan cheese.
  6. Place skewers on the baking sheet and spray lightly with cooking spray.
  7. Bake for 10–12 minutes, or until cheese is slightly crispy and tortellini are golden.
  8. Remove from oven and serve warm. Garnish with basil or more Parmesan if desired.

Notes

  • Use homemade or store-bought pesto depending on your preference.
  • You can make these ahead and bake just before serving.
  • Serve with marinara or extra pesto for dipping.
