Description
These Pesto Tortellini Bites are a simple and flavorful appetizer made by coating cheese tortellini in pesto, skewering them, and roasting until crispy. Perfect for parties or easy weeknight snacks.
Ingredients
- 10 oz package of cheese tortellini
- 1/2 cup pesto (store-bought or homemade)
- 1/2 cup grated Parmesan cheese
- Cooking spray
- Optional: fresh basil or extra Parmesan for garnish
Instructions
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- Cook tortellini according to package instructions, then drain and let cool slightly.
- In a large bowl, toss the tortellini with pesto until evenly coated.
- Thread 3–4 pesto-coated tortellini onto small skewers or toothpicks.
- Sprinkle the skewers with grated Parmesan cheese.
- Place skewers on the baking sheet and spray lightly with cooking spray.
- Bake for 10–12 minutes, or until cheese is slightly crispy and tortellini are golden.
- Remove from oven and serve warm. Garnish with basil or more Parmesan if desired.
Notes
- Use homemade or store-bought pesto depending on your preference.
- You can make these ahead and bake just before serving.
- Serve with marinara or extra pesto for dipping.
