Ingredients
- 1 box yellow cake mix (plus ingredients called for on the box)
- 1 can (20 oz) crushed pineapple with juice
- 1 cup granulated sugar
- 1 package (3.4 oz) instant vanilla pudding mix
- 1 1/2 cups cold milk
- 1 container (8 oz) whipped topping (like Cool Whip), thawed
- 1 cup sweetened shredded coconut
Instructions
- Prepare the yellow cake mix according to package instructions using a 9×13 inch baking pan. Allow it to cool completely.
- In a saucepan over medium heat, combine the crushed pineapple (with juice) and granulated sugar. Bring to a boil, then remove from heat.
- Using a fork or skewer, poke holes all over the cooled cake. Pour the pineapple mixture evenly over the cake and let it soak in. Cool completely.
- In a medium bowl, whisk together the instant vanilla pudding mix and cold milk. Let it sit for a few minutes to thicken.
- Spread the pudding over the pineapple layer on the cake.
- Spread the thawed whipped topping evenly over the pudding layer.
- Sprinkle shredded coconut evenly on top.
- Refrigerate for at least 2 hours or until ready to serve.
