Description

Pineapple Cucumber Salad is a refreshing, vibrant salad combining sweet pineapple, crisp cucumber, and zesty lime dressing with optional hints of jalapeño heat and creamy feta. This easy, healthy salad is perfect as a light side dish or snack, offering a delightful balance of sweet, tangy, and spicy flavors.


Ingredients

  • 2 cups fresh pineapple, diced
  • 1 large English cucumber, diced (or 2 Persian cucumbers)
  • ¼ small red onion, thinly sliced
  • ¼ cup fresh cilantro, chopped
  • 1 small jalapeño, thinly sliced (optional)
  • ¼ cup crumbled feta cheese (optional)

For the Dressing:

  • 2 tbsp fresh lime juice
  • 1 tbsp honey or maple syrup
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp red pepper flakes (optional)

Instructions

  1. Dice pineapple and cucumber; thinly slice red onion and jalapeño if using. Chop cilantro and crumble feta cheese.
  2. In a small bowl, whisk together lime juice, honey, olive oil, salt, black pepper, and red pepper flakes.
  3. In a large bowl, combine pineapple, cucumber, red onion, cilantro, and jalapeño. Drizzle dressing over and toss gently to coat.
  4. Sprinkle feta cheese on top if desired. Serve immediately or chill 15–30 minutes to blend flavors. Garnish with extra cilantro or lime juice before serving.

Notes

  • Jalapeño and red pepper flakes add heat but can be omitted for a milder salad.
  • Use fresh lime juice for the best tangy flavor.
