Description
A refreshing and fruity Pineberry Pineapple Mint Cooler made with fresh pineberries, pineapple, and mint. Perfect for warm days or as a delightful non-alcoholic beverage.
Ingredients
- 1 cup fresh pineberries, hulled and sliced
- 1 cup fresh pineapple chunks
- 6–8 fresh mint leaves
- 1 tablespoon agave nectar or honey (optional)
- 1/2 cup cold water or coconut water
- Ice cubes
- Club soda or sparkling water (to top off)
- Mint sprigs and pineberries for garnish (optional)
Instructions
- Add sliced pineberries, pineapple chunks, and mint leaves to a blender.
- Add agave nectar or honey if using, and pour in the cold water or coconut water.
- Blend until smooth.
- Strain the mixture through a fine mesh sieve if desired for a smoother texture.
- Fill a glass with ice cubes and pour the mixture over the ice, filling about 2/3 of the glass.
- Top off with club soda or sparkling water.
- Garnish with mint sprigs and pineberries if desired. Serve immediately.
Notes
- Adjust sweetness by adding more or less agave nectar or honey.
- For a slushier version, blend with ice instead of using ice cubes in the glass.
- Can be made ahead and stored in the fridge (without soda) for up to a day.
