Description

A refreshing and fruity Pineberry Pineapple Mint Cooler made with fresh pineberries, pineapple, and mint. Perfect for warm days or as a delightful non-alcoholic beverage.


Ingredients

  • 1 cup fresh pineberries, hulled and sliced
  • 1 cup fresh pineapple chunks
  • 68 fresh mint leaves
  • 1 tablespoon agave nectar or honey (optional)
  • 1/2 cup cold water or coconut water
  • Ice cubes
  • Club soda or sparkling water (to top off)
  • Mint sprigs and pineberries for garnish (optional)

Instructions

  1. Add sliced pineberries, pineapple chunks, and mint leaves to a blender.
  2. Add agave nectar or honey if using, and pour in the cold water or coconut water.
  3. Blend until smooth.
  4. Strain the mixture through a fine mesh sieve if desired for a smoother texture.
  5. Fill a glass with ice cubes and pour the mixture over the ice, filling about 2/3 of the glass.
  6. Top off with club soda or sparkling water.
  7. Garnish with mint sprigs and pineberries if desired. Serve immediately.

Notes

  • Adjust sweetness by adding more or less agave nectar or honey.
  • For a slushier version, blend with ice instead of using ice cubes in the glass.
  • Can be made ahead and stored in the fridge (without soda) for up to a day.
