Description

Ingredients

  • 1/2 cup unsalted butter
  • 1 cup semisweet chocolate chips
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1/2 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1/2 cup chopped pistachios
  • 1/2 cup white chocolate chips
  • 1/4 cup heavy cream
  • 1/4 cup pistachio paste
  • Chopped pistachios for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a saucepan, melt butter and semisweet chocolate chips over low heat, stirring until smooth. Remove from heat and let cool slightly.
  3. Stir in the sugar, eggs, and vanilla extract until combined.
  4. Add flour and salt to the chocolate mixture and mix until just combined.
  5. Fold in the chopped pistachios, then pour the batter into the prepared baking pan and spread evenly.
  6. Bake for 20–25 minutes or until a toothpick inserted in the center comes out with moist crumbs. Let cool completely.
  7. For the ganache, heat the heavy cream until just simmering, then pour over the white chocolate chips in a bowl. Let sit for 1–2 minutes, then stir until smooth.
  8. Mix in the pistachio paste until fully incorporated and smooth.
  9. Spread the pistachio ganache over the cooled brownies evenly.
  10. Refrigerate the brownies for at least 30 minutes to set the ganache. Slice and serve, garnished with additional chopped pistachios if desired.
