Description
These Pistachio Chocolate Lava Cakes are an indulgent dessert featuring a rich chocolate cake exterior with a molten pistachio-flavored chocolate center. Perfect for dinner parties or special occasions, they combine the nutty flavor of pistachio with deep, gooey chocolate.
Ingredients
- 90g dark chocolate
- 90g unsalted butter
- 2 large eggs
- 2 large egg yolks
- 45g granulated sugar
- Pinch of salt
- 30g all-purpose flour
- 60g pistachio spread (or pistachio cream)
- Extra butter and cocoa powder for greasing the ramekins
Instructions
- Preheat your oven to 220°C (430°F). Grease 4 ramekins with butter and dust with cocoa powder.
- In a heatproof bowl, melt the dark chocolate and butter together over a double boiler or in the microwave. Stir until smooth and set aside to cool slightly.
- In a mixing bowl, whisk together the eggs, egg yolks, sugar, and salt until pale and slightly thickened.
- Gradually pour the melted chocolate mixture into the egg mixture, stirring constantly to combine.
- Fold in the flour until just incorporated.
- Fill each ramekin halfway with the batter. Add a teaspoon of pistachio spread to the center of each, then top with more batter to cover the filling.
- Place the ramekins on a baking tray and bake for 10–12 minutes, or until the edges are set but the center is still soft.
- Let the cakes rest for 1 minute, then gently invert them onto plates. Serve immediately.
Notes
- Do not overbake or the center will lose its molten texture.
- You can freeze the pistachio spread into small discs beforehand for a more defined lava center.
- Serve with a scoop of vanilla ice cream or a dusting of powdered sugar for extra indulgence.
