Description

These Pistachio Chocolate Lava Cakes are an indulgent dessert featuring a rich chocolate cake exterior with a molten pistachio-flavored chocolate center. Perfect for dinner parties or special occasions, they combine the nutty flavor of pistachio with deep, gooey chocolate.


Ingredients

  • 90g dark chocolate
  • 90g unsalted butter
  • 2 large eggs
  • 2 large egg yolks
  • 45g granulated sugar
  • Pinch of salt
  • 30g all-purpose flour
  • 60g pistachio spread (or pistachio cream)
  • Extra butter and cocoa powder for greasing the ramekins

Instructions

  1. Preheat your oven to 220°C (430°F). Grease 4 ramekins with butter and dust with cocoa powder.
  2. In a heatproof bowl, melt the dark chocolate and butter together over a double boiler or in the microwave. Stir until smooth and set aside to cool slightly.
  3. In a mixing bowl, whisk together the eggs, egg yolks, sugar, and salt until pale and slightly thickened.
  4. Gradually pour the melted chocolate mixture into the egg mixture, stirring constantly to combine.
  5. Fold in the flour until just incorporated.
  6. Fill each ramekin halfway with the batter. Add a teaspoon of pistachio spread to the center of each, then top with more batter to cover the filling.
  7. Place the ramekins on a baking tray and bake for 10–12 minutes, or until the edges are set but the center is still soft.
  8. Let the cakes rest for 1 minute, then gently invert them onto plates. Serve immediately.

Notes

  • Do not overbake or the center will lose its molten texture.
  • You can freeze the pistachio spread into small discs beforehand for a more defined lava center.
  • Serve with a scoop of vanilla ice cream or a dusting of powdered sugar for extra indulgence.
