Description
Pizza Eggs combine the delicious flavors of pizza with the protein-rich goodness of eggs for a quick, low-carb breakfast or snack.
Ingredients
- 1 tsp olive oil
- 2 eggs
- 2 tbsp pizza sauce
- 2 tbsp shredded mozzarella cheese
- 5–6 slices of pepperoni
- 1/4 tsp Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Heat olive oil in a small nonstick skillet over medium heat.
- Crack the eggs into the skillet and cook until whites are mostly set but yolks are still runny (or to your preferred doneness).
- Spread the pizza sauce over the egg whites gently.
- Sprinkle mozzarella cheese on top.
- Add pepperoni slices over the cheese.
- Sprinkle with Italian seasoning, salt, and pepper.
- Cover the skillet with a lid and cook for 1-2 minutes, until the cheese melts.
- Remove from heat, garnish with fresh basil if desired, and serve immediately.
Notes
- You can substitute pepperoni with veggies or other proteins for a healthier version.
- Use low-sugar pizza sauce to keep it more low-carb friendly.
