Description

Crispy, golden, and flavorful, this Popcorn Chicken recipe is perfect for snacks, parties, or a fun family dinner. Bite-sized pieces of marinated chicken are double-coated and fried to perfection.


Ingredients

  • 2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup buttermilk
  • 1 teaspoon hot sauce
  • 2 cups all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon cayenne pepper
  • 2 large eggs
  • Oil for frying

Instructions

  1. In a bowl, mix the buttermilk and hot sauce. Add the chicken pieces, toss to coat, cover, and marinate in the fridge for 1 hour.
  2. In a separate bowl, whisk together the flour, garlic powder, paprika, salt, pepper, and cayenne pepper.
  3. In another bowl, whisk the eggs.
  4. Heat oil in a deep frying pan to 350°F (175°C).
  5. Remove chicken from buttermilk. Dredge each piece in the flour mixture, dip in eggs, then coat again in the flour mixture.
  6. Fry the chicken pieces in batches for 3–4 minutes or until golden brown and fully cooked.
  7. Drain on paper towels and serve hot.

Notes

  • For extra crispiness, let the coated chicken rest for 10 minutes before frying.
  • Use a thermometer to keep the oil at a steady 350°F for even cooking.
