Description
These crispy and cheesy potato croquettes are made with mashed potatoes, filled with mozzarella, and coated in a golden breadcrumb crust. Perfect as an appetizer or snack.
Ingredients
- 2 lbs russet potatoes, peeled and cubed
- 1/2 cup grated Parmesan cheese
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt, to taste
- Black pepper, to taste
- 8 oz mozzarella cheese, cut into small cubes
- 1 cup breadcrumbs (panko preferred)
- Vegetable oil, for frying
Instructions
- Boil the peeled and cubed potatoes in salted water until fork-tender, about 15–20 minutes. Drain and mash until smooth. Let cool slightly.
- To the mashed potatoes, add grated Parmesan, flour, one beaten egg, garlic powder, onion powder, salt, and pepper. Mix until well combined and dough-like.
- Take a small scoop of the potato mixture, flatten it in your palm, place a cube of mozzarella in the center, and wrap the potato mixture around it to form a ball or oval shape. Repeat with remaining mixture.
- In one bowl, beat the second egg. Place breadcrumbs in another bowl.
- Dip each croquette into the egg, then coat in breadcrumbs. Set aside on a tray.
- Heat vegetable oil in a deep frying pan or pot to 350°F (175°C). Fry croquettes in batches until golden brown and crispy, about 3–4 minutes per batch.
- Remove with a slotted spoon and drain on paper towels. Serve hot.
Notes
- Use cold mashed potatoes for easier shaping and less sticky texture.
- Try different cheeses like cheddar or gouda for variation.
- Bake instead of fry for a lighter version (at 400°F for about 20 minutes).
- Can be frozen before frying for make-ahead prep.
