Ingredients
- 2 large potatoes, peeled and grated
- 1 small onion, grated
- 1 egg
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1/2 lb ground beef
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 cup chopped parsley
- 1 cup shredded cheddar cheese
Instructions
- In a large bowl, combine the grated potatoes, onion, egg, flour, salt, and pepper. Mix well.
- Heat olive oil in a skillet over medium heat. Spoon the potato mixture into the skillet to form pancakes. Cook for 4–5 minutes per side, until golden brown and crispy. Remove from skillet and set aside.
- In the same skillet, cook the ground beef until browned. Season with garlic powder, paprika, salt, and pepper. Stir in chopped parsley.
- Preheat the oven to 350°F (175°C).
- Place the potato pancakes on a baking sheet. Top each pancake with a scoop of the beef mixture and sprinkle with shredded cheddar cheese.
- Bake in the preheated oven for 5–7 minutes, until the cheese is melted and bubbly.
- Serve hot and enjoy!
