Description

A comforting and hearty chicken pot pie made with a flaky puff pastry crust and a creamy, savory filling packed with chicken and vegetables. Easy to prepare and perfect for a cozy family dinner.


Ingredients

  • 2 tablespoons salted butter
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped celery
  • 1/2 cup finely chopped carrots
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 1 1/2 cups chicken broth
  • 1/2 cup heavy cream
  • 2 cups cooked, chopped chicken
  • 1/2 cup frozen peas
  • 1 sheet puff pastry, thawed
  • 1 egg (for egg wash)

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a 9-inch pie plate.
  2. In a large skillet over medium heat, melt butter. Add onions, celery, and carrots. Cook until softened, about 5 minutes.
  3. Season with salt and pepper. Stir in flour and cook for 1 minute to remove the raw flour taste.
  4. Slowly whisk in chicken broth and heavy cream. Bring to a simmer and cook until thickened, about 2-3 minutes.
  5. Stir in cooked chicken and frozen peas. Remove from heat.
  6. Pour the filling into the prepared pie plate and smooth out the top.
  7. Place the thawed puff pastry sheet over the top of the filling. Trim excess pastry and press edges to seal. Cut a few slits in the top for steam to escape.
  8. Beat the egg and brush it over the puff pastry for a golden crust.
  9. Bake for 25-30 minutes, or until the pastry is golden brown and filling is bubbling.
  10. Let rest for 5 minutes before serving.

  • Use rotisserie chicken to save time on cooking.
  • Make the filling ahead of time and refrigerate until ready to bake.
  • You can add other vegetables like corn or green beans if desired.
  • If the pastry starts browning too quickly, cover with foil during baking.
